Today we’ve got this wonderful recipe from one of our loyal fans Mr Artur de Woroncow-Wojtkowicz -warm goats cheese salad,or to make it short- King Artur’s Goat Cheese Salad.
What you see here is Artur’s recipe with a little bit of “professional touch” by us.What we call a professional touch is actually chargrilled apples, which before grilling are dipped in the honey-cider vinaigrette. All we can say, that it brings a whole new level of taste in them and the salad: melting and sweet on the outside, but still fresh inside.
In smaller servings this salad will make a nice appetizer or a healthy main course.
Ingredients:
2 small goat cheese rinds
2 tomatoes, medium size tomatoes
1 avocado
1 apple (We’ve used Golden Delicious)
50 g green salad (any will do fine)
sliced/chopped almonds
Vinaigrette:
1.5 tablespoons honey
3 tablespoons apple cider vinegar
Salt and freshly grounded pepper
4-6 tablespoons olive oil
a dash of lemon juice
Method:
Cut the apple in wedges, dip in the vinaigrette to coat then quickly chargrill on both sides.
Peel the avocado and slice it up.
For the vinaigrette, whisk together honey and vinegar till the honey has dissolved. Season with salt and pepper and slowly add the olive oil, till you have a homogeneous sauce. Dip a salad leave to taste if you are happy with the vinaigrette. You may add a dash of lemon juice, salt, pepper as needed.
Cut the tomatoes in 6-8 wedges each.Place the goat cheese on a baking tray and put in a warm oven for a few minutes.
To serve, on the plates arrange the salad leaves, apple, avocado and tomato wedges. Top with warm goat cheese, sprinkle some almonds and spoon over some vinaigrette.
