A very simple yet super delicious and healthy one.  It’s one that I could so eat every single day and never get tired of.  It’s a salad, not so much a whole complete meal unless you wanted to add some protein to it of some sort, but nonetheless amazing!  It’s full of healthy fats that your body needs from the avocado, olive oil and kalamatas.  The tomatoes are wonderful themselves with all of their lycopene to help prevent cancer, lots of vitamin B6, and they have been shown to reduce LDL (bad cholesterol) and reduce heart disease.  The lemon juice and fresh basil really help to give it that added freshness and you pretty much need fresh basil when you are eating tomatoes, right?

As for the seasoning, I used za’atar and sprinkled this on the sliced tomatoes before I added anything else.  I got this tasty little spice from my aunt the other day and I’m so glad that I did (you can find it at Middle Eastern specialty stores or Lebanon in my aunt’s case).  Za’atar is a Middle Eastern spice typically made of thyme, oregano and sesame seeds, but from what I understand there are different variations.  My uncle is Lebanese so I have luckily been introduced to a lot of Lebanese food throughout the years and I would have to say that it is my favourite type of food.  It is so healthy and so fresh and delicious so I highly recommend it.

Ingredients
  • 4 stem tomatoes sliced
  • 1 Tbsp of za’atar
  • 1 avocado cubed
  • Juice of 1 lemon
  • Handful of Kalamata olives sliced
  • Handful of sliced scallions
  • 1 Tbsp fresh basil sliced in ribbons
  • 2 Tbsp extra virgin olive oil
  • Feta cheese crumbled to taste
Instructions
  1. Lay the tomato slices on a plate or serving tray and sprinkle with the za’atar
  2. Toss the avocado and lemon juice together in a bowl. Once mixed, place the avocado on top of the tomato slices
  3. Sprinkle on the chopped kalamata olives and scallions
  4. Top with fresh basil and a drizzle of olive oil
  5. Sprinkle on the feta cheese
