I am currently in the middle of a love affair…
With avocado.
It is warm, thick, crunchy on the outside, soft and creamy on the inside, completely vegan, and utterly delicious. I can also say mouth-watering, appetizing, delectable. All synonyms of food heaven.
Thinking now I have always loved avocado. Guacamole has always been one of my favorite dips. I always like adding avocado to salads and then there is avocado toast. And avocado toast: the meaning of silence.
Some of the most profound moments in our lives are, in fact, defined by silence. And that if you find me eating mashed avocado on toast — for breakfast or lunch — the room has never been so silent (my mouth is full).
This love affair makes it even more peculiar that I am just now seeing it as an ingredient I can add to just about everything. Take this sandwich for instance, the avocado gives it so much creaminess and richness that I just may say goodbye to mayo in my chicken salad sandwiches forever. After you try it, my guess is you will too.
Ingredients:
- 1 avocado pitted and skin removed
- 2 slices sourdough bread
- ¼ cup of cherry tomatoes – halved
- Extra Virgin Olive oil
- Salt and Pepper
Instructions:
Mash avocados in a bowl just until they are mostly mashed but you still want some chunks.
Toast the bread. Brush with the extra virgin olive oil.
Spread the avocado on top the bread.
Top with cherry tomatoes.
Season with salt and pepper to your taste.
Keep silent
Enjoy.
