Ingredients

  • 2 medium-sized sweet potatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of paprika
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of garlic powder
  • Optional: fresh herbs like rosemary or thyme

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Wash and scrub the sweet potatoes thoroughly to remove any dirt or debris.
  3. Cut the sweet potatoes into wedges or cubes, depending on your preference.
  4. In a large bowl, mix together the olive oil, salt, paprika, black pepper, and garlic powder. Add the sweet potato pieces to the bowl and toss them in the spice mixture until they are evenly coated.
  5. Spread the sweet potato pieces out on a baking sheet, making sure they are in a single layer and not touching each other.

  6. Bake the sweet potatoes in the preheated oven for 20-25 minutes, or until they are tender and golden brown. You can check for doneness by inserting a fork into the sweet potatoes – if it goes in easily, they are done.
  7. If desired, sprinkle some fresh herbs like rosemary or thyme over the sweet potatoes for added flavour and aroma.
  8. Serve the oven-baked sweet potatoes hot as a side dish, or use them as a base for a delicious and healthy meal.
