Ingredients

  • 4 cups chicken broth
  • 2 boneless skinless chicken breasts
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 2 bunches Bok Choy
  • 4 portions of fresh ramen noodles
  • 4 spring onions sliced

Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the chicken breasts and cook until fully cooked about 8-10 minutes. Remove the chicken from the broth and let it cool before shredding.
  2. In the same pot, add the garlic and ginger to the broth and cook for 1-2 minutes.
  3. Add the soy sauce, hoisin sauce, rice vinegar, and sesame oil to the pot and stir to combine.
  4. Add the bok choy to the pot and cook for 2-3 minutes or until tender.
  5. Cook the ramen noodles according to the package instructions and divide them among 4 bowls.
  6. Pour the broth and bok choy mixture over the noodles and top each bowl with shredded chicken.
  7. Garnish with sliced spring onions. Serve hot and enjoy!
