Onion Bread

Our Bulgarian adventure continues,this time with a recipe that has turned my thinking upside down.We eat with our eyes,every time looking for the “Wow factor”.Eating is not just a biological process-eating is an experience-celebration of life.And here it comes-a recipe I saw in a small Bulgarian village-a recipe that  proves that you don’t have to be a big chef or you don’t have to use very expensive products in order  to create the “Wow Factor” at home.

Onion Bread

Ingredients:

  • 1 unsliced loaf sourdough bread
  • 12-16 ounces semi-hard cheese (thinly sliced)-here I’ve used the Bulgarian Kashkaval-cheese similar to the Italian Caciocavallo,the British Cheddar cheese,The American Monterey Jack cheese
  • 1/2 cup butter, melted
  • 1/2 cup finely diced green onion
  • 2 teaspoons poppy seeds
  • Method:

Preheat oven to 350 degrees.

Cut the bread lengthwise ……

….and widthwise without cutting through the bottom crust.This can be a little tricky going the second way but the bread is very forgiving.

Insert cheese slices between cuts.

Place on a foil-lined baking sheet. Combine butter, onion, and poppy seeds. Drizzle over bread. Wrap in foil; place on a baking sheet.

Bake at 350 degrees for 15 minutes.
Unwrap the bread and bake 10 more minutes, or until cheese is melted.
